TASTING NOTES
At sight it has an intense ruby red color with violet reflections. The nose is dominated by fruity aromas of blackberry and blueberry, which are accompanied by fine spicy hints of licorice, vanilla and black pepper. A wine of great structure and fullness with a fresh, soft and velvety entry, a savory and pleasantly persistent finish. The richness of tannins and the good acidity guarantee a marked aptitude for aging and exalting itself in the bottle. Ideal with game and red meat dishes.
VINIFICATION
The grapes are crushed and destemmed at temperatures below 18°C and fermented in thermo-conditioned vitrified cement tanks. After starting the fermentation, the temperature is increased gradually, up to a maximum of 28°C towards the end of the fermentation process. Maceration is managed with daily operations of short pumping over and delestage lasting about 20 days. After racking, soft pressing of the pomace and a first racking, the wine undergoes mano-lactic fermentation in cement tanks, then is transferred to second-use French oak barriques. The aging in wood lasts about 24 months and, after bottling, 1 year in the bottle.
