Our wines are focused on elegant, single vineyard, single Alsatian noble varietals including: Gewürztraminer, Riesling, Pinot Gris, Pinot Blanc, Sylvaner and Pinot Noir. We also explore Central Coast vineyards where the pure expression of Cabernet Sauvignon and Cabernet Franc inspire us.

Union Sacré's Skin Contact Pinot Blanc from California offers a distinctive and textured expression of the varietal, influenced by Alsatian winemaking traditions and crafted in the Central Coast.

🍇 Tasting Notes

  • Aromatics: The wine presents fruity aromas of white-fleshed orchard fruits and citrus blossoms.

  • Palate: Delicately layered flavors of Asian pear, cantaloupe, yellow watermelon, and white peach are complemented by a beautiful texture and pleasant weightiness from the skin contact. 

  • Finish: The finish is long and juicy, with nicely balanced acidity and a touch of lemon pith. 

🛠️ Winemaking Approach

  • Grapes: 100% Pinot Blanc sourced from the Oasis Vineyard. 

  • Process: Grapes were hand-sorted and completely destemmed, with overnight skin contact. Pressed the next day, the juice underwent a cold crash at 50°F for 16 hours, followed by native yeast fermentation in a temperature-controlled stainless-steel tank. The wine was aged in concrete and stainless steel for six months and bottled unfined and unfiltered.

These wines are made for the tables of friends, by two friends, from different continents, Xavier and Philip, who arrived at the Central Coast from opposite ends of the Earth. Xavier is a WSET certified, oenology degree holder from France, Philip is a self-taught designer from Michigan who kind of misses living in a van.

Between the two of them, Xavier and Philip have 35+ years experience working in Central Coast wineries. Xavier has made wine with some of the Central Coasts most luminous wineries. Philip cut his teeth at Proof Wine Collective.
