Description

Grape variety: 50% Grenache Noir, 30% Syrah Noir, 20% Cinsault.
Aging: Destemming, no crushing. Cold prefermentation, Fermentation for about 4 weeks. Maceration for a maximum of ten days. 10 months in concrete vats followed by bottling before summer.

Yield:  35Hl/ha

Gastronomic alliances:   As an aperitif, with meats, cheeses or simply on its own for pleasure.

The estate is located in the South of France, in the heart of Languedoc in the commune of Carnas, in the Gard department, surrounded by scrubland, in a valley at the foot of the Cévennes.

Its limestone and gravel soil and an exceptionally sunny climate make it a privileged terroir, from which quality, fruity and spicy wines are produced.

The vinifications are conducted in oval-shaped concrete vats for a better juice-marc exchange for red wines, in stainless steel vats for whites and rosés. All vats are thermo-regulated (hot, cold). We use French oak barrels, medium toast, for the vinification and aging of certain white and red wines.

From the vine to the glass, the entire approach of the estate is based on the desire to create high-quality wines, combining finesse and personality, while respecting the terroir, the product and the consumer.

The Estate is now in organic farming , but also under the quality label "Demeter biodynamic wines" .
