Description
Chardonnay carries a certain amount of baggage for many people, which sucks if it means they miss out on such a beautiful variety. We work with old-vine, Chardonnay that retains downright nervy acidity even through barrel aging in a combination of older French oak and newer Oregon oak. The wine is rich without being blousy, like fresh brioche topped with honeycomb spiked with slivers of preserved lemon.
About Us
We met in a knife fight (just kidding, it was a Whole Foods), but that story is for another time.
Fossil & Fawn is the wine project of business-and-life partners Jenny Mosbacher and Jim Fischer. What started out as 50 cases of experimental Pinot noir in the autumn of 2011, is now a production of about 5000 cases across eight core wines with grapes sourced from throughout the Willamette Valley. Although the scope has evolved significantly, the spirit of the original goal remains the same: to make vineyard-forward wines that honor the land and history of the place while remaining open to experimentation and fun.

We practice this ethos through our commitment to sourcing from sustainably-managed farmer-owned smallholdings— including our family vineyard sited in the Eola Hills. Because step one is to get good grapes. The much-harder next step is to not fuck them up.
We endeavor to take a light touch in the cellar, emphasizing natural yeast fermentation, limited use of new wood (except for locally-sourced Oregon Oak barrels), judicious use of sulfur, and the occasional gentle filtration. But this is a framework, not a dogma.
One time, a customer told us that Fossil & Fawn was the only wine she could bring to family dinner, because it was one that both she and her parents would both enjoy. It’s as good of an endorsement as we could hope for.
