Our wines are focused on elegant, single vineyard, single Alsatian noble varietals including: Gewürztraminer, Riesling, Pinot Gris, Pinot Blanc, Sylvaner and Pinot Noir. We also explore Central Coast vineyards where the pure expression of Cabernet Sauvignon and Cabernet Franc inspire us.

Union Sacré 40 Days Cofermented Orange Wine is a distinctive skin-contact white wine from California's Central Coast, crafted by Union Sacré. This wine pays homage to Alsatian winemaking traditions, blending noble varietals to create a complex and aromatic profile.


🍊 Tasting Notes

  • Aromatics: The wine offers a bouquet of orange blossom, honeysuckle, potpourri, and chamomile, delivering a floral and exotic nose. 

  • Palate: On the palate, it is dry and textured, with notes of clementine, nectarine, lychee, and chamomile flowers. 

  • Finish: The wine concludes with a pleasant, dry finish, showcasing its balanced acidity and complex flavors.


🍇 Blend & Winemaking

  • Grape Composition: The blend consists of 40% Gewürztraminer, 30% Pinot Blanc, 20% Pinot Gris, and 10% Sylvaner.

  • Fermentation: The grapes were co-fermented on the skins for 40 days using native yeast, enhancing the wine's structure and aromatic complexity. 

  • Aging: Post-fermentation, the wine was aged in a 900-gallon wood tank, adding depth and texture. 

  • Alcohol Content: 12.3% ABV.

These wines are made for the tables of friends, by two friends, from different continents, Xavier and Philip, who arrived at the Central Coast from opposite ends of the Earth. Xavier is a WSET certified, oenology degree holder from France, Philip is a self-taught designer from Michigan who kind of misses living in a van.

Between the two of them, Xavier and Philip have 35+ years experience working in Central Coast wineries. Xavier has made wine with some of the Central Coasts most luminous wineries. Philip cut his teeth at Proof Wine Collective.
