Hot Dog: NYC Dirty Water Dog
Region: New York City, New York

Thank You! It was awesome to celebrate our 9th Anniversary with you all and Hop Butcher for the World. The Francheezie was a huge hit, and it was a blast partnering with Hop Butcher to bring y’all our twist on this legendary Chicago Dog. As we head into the month of May, let’s travel to the bustling streets of New York City. Can you see the Blue and Yellow umbrellas? Can you smell the steam of hot dogs in your nostrils? Is there a rumble in your belly? If yes, then It’s time to grab a New York City Dirty Water Dog!

The Story: Step onto the bustling streets of New York City and let the scent of sizzling street food pull you in. It’s the 1870s on the Bowery—gritty, loud, and full of hustle. German immigrants are slinging sausages from wooden carts, feeding hungry New Yorkers on the go. But here’s the rub: open flames and wooden carts? Not exactly fire-code compliant. So after a few too many “hot dog infernos,” a new method was born—boiling the dogs in big, insulated containers of hot, seasoned water. Safe, smart, and straight-up delicious. And just like that, the Dirty Water Dog became a street food legend.

Traditional Build: If you're in the know, you’re headed straight for that classic blue-and-yellow Sabrett umbrella. That’s where the magic happens—natural-casing beef franks steaming away in that iconic “dirty” water, ready to be loaded up with zesty brown mustard, tangy sauerkraut, and Sabrett’s signature red onion sauce. It’s not fancy—it’s just real. It’s the taste of a New York minute.

And don’t let the name throw you—the water ain’t dirty. It’s a flavorful bath of beef broth, vinegar, salt, and whatever secret blend the vendor’s grandma swore by. It’s that simmering elixir that gives the dog its snap, its soul, and that unbeatable street cart flavor.

BP Spin: That water’s gotta be right. We spike it with ketchup, red wine vinegar, and a secret stash of spices to create our own NYC-worthy bath. Our dog takes a dip, then gets laid out on a pillowy Turano bun. From there, it’s topped with sautéed onions that have been slow-cooked in ketchup, cinnamon, water, and salt—just the way Gotham likes it. Then comes a heap of sauerkraut and a classic squiggle of yellow mustard. It’s bold, messy, and full of character—just like the city that inspired it.
